THE ARCHITECTURE

Pure cocoa butter supplies the texture. Carob does much of the work usually asked of cocoa solids, without caffeine or theobromine. Alkalised cocoa powder brings back the familiar chocolate depth.

WHY GLYCINE

Approximately 30% in collagen.

CH1 contains 3 g of glycine, matching the amount used in a small human sleep study. Glycine appears at every third position in collagen's repeating Gly-X-Y sequence, which means approximately 30% of collagen's amino acid residues are glycine. Collagen is a structural protein found in cartilage, tendons, ligaments, skin, and bone.

Glycine contributes to collagen structure, but consuming it does not prove joint repair or treatment of damaged tissue.
